This fruit cake will have you humming with delight! It is delicious and at the same time very easy to prepare with very simple ingredients.
Necessary products
quark – 700 g or cream cottage cheese at room temperature
vanilla extract – 1 tsp.
powdered sugar – ¾ tsp.
biscuits – – 200 g or graham crackers 20 no. the whole
strawberries – 350 g or quantity of your choice, washed and chopped
blueberries – 200 g quantity of your choice
peach compote – 100 ml or sweetened water
gelatin – 1, 1/2 tsp.
Method of preparation:
In a 26 cm pan, place a row of crackers or graham crackers, breaking each cracker or cookie to fit if necessary.
In a large bowl, mix the creamy cottage cheese – quark, the vanilla extract. Add maple syrup or powdered sugar and stir to combine.
Drizzle about ⅓ of the cream mixture over the cookies or graham crackers and spread into an even layer.
Arrange the chopped strawberries and blueberries evenly on top of the quark mixture. I also added some nectarines because I had some.
Repeat the layers twice.
Then take the remaining strawberries and blueberries, make a decorative layer on top of the cottage cheese cake.
Pour the gelatin with compote or water and sugar, when it swells, heat it either in a water bath or in a microwave oven. Leave it at room temperature to thicken slightly. Spread it over the strawberries and blueberries and let the jelly cake set.
Cover the dessert and refrigerate for at least 4 hours or overnight before serving. Remember, the best part of this no-bake cake wonder is the versatility it offers – feel free to add your own personal touch and create your own delicious version of a fruit curd cake.
