Spoil mom in bed with this delicious breakfast pack.

Enough for 1.

Ingredients

• 2nd (30ml) Clover Mooi River Butter
• 2 tbsp (30 ml) olive oil
• 4 mushrooms, quartered
• 3 spring onions, chopped
• 5 cherry tomatoes, quartered
• 2 strips of bacon, fried to a crisp and chopped
• 3 eggs
• 1 e (15 ml) Clover se vars room
• salt and freshly ground black pepper
• 1 tortilla

Method

1. Heat half the butter and oil over a medium heat in a pan and saute the mushrooms for 3 minutes.
2. Add the spring onions and tomatoes and stir-fry for another 2 minutes. Scoop into a bowl and stir in the bacon. Keep aside.
3. Whisk together the eggs, cream, salt and pepper. Heat the rest of the butter and oil in the pan and pour the egg mixture into it. Let cook for 2 minutes and stir from the edge of the pan inward until the egg mixture is just set.
4. Remove from the heat and stir in the mushroom mixture. Heat the tortilla according to the directions on the package and spoon the egg mixture into it. Fold neatly and serve immediately.
